We all know Girl Scout season is coming to a close when we no longer see those adorable faces selling boxes of tagalongs at the grocery store corner (although I’m always secretly thankful…ahem, beach season). For many, we stock up on thin mints and load them in the freezer for that after dinner treat, yes I’m also guilty of eating an entire roll at once. But truthfully, these girls are learning some great skills and kudos to them for sharpening their sales pitch at such a young age. I’ve had the privilege of working with Girls Scouts of America way back in my college years, with our philanthropic work at Kappa Delta Sorority (AOT), so I can never pass them up, ever.
Since today is Girls Scouts of America Day (founded March 12, 1912), I thought I’d make some sweet treats to honor these girls AND also help clean out my freezer. I found a delicious recipe online for some thin mint parfaits and I was instantly sold. These are super easy to make and can even be made ahead of time, so you’re not scrambling right before your #kuwtk season finale. Check out the recipe below:
- 2 Cups of Chocolate Pudding (I used the individual snack packs)
- 1 Container Cool Whip – thawed
- 1 Box Thin Mint Girl Scout Cookies
- Fresh Mint
Break up the cookies into small pieces and set aside. Leave a few whole cookies for a garnish on top. Layer the cool whip, pudding and cookies in small glasses until you reach the top. Once full, add a whole cookie and fresh mint garnish on top. Place in the fridge until ready to eat. Adorable right?!
